These light and tender muffins are easy to prepare, perfect for the morning with a cup of tea and healthy because they don’t contain butter or oil.
They are so fluffy that you absolutely have to bake them!!
- 160g of coconut flour
- 100g of flour
- 200g of yogurt
- 1 egg
- 150g of sugar
- 10 mg of baking powder
- Preheat the oven to 180C
- Mix the egg, sugar and yogurt
- Add the flours and the baking powder and mix until combined
- Spoon the mixture into the 9 cake cases and put the tray in the oven at 180C for 25 minutes until set
- Once muffins are done leave them to stand for 15 mins then cover with sweet whipped cream
