Yogurt and coconut muffins πŸ’Ÿ

​These light and tender muffins are easy to prepare, perfect for the morning with a cup of tea and healthy because they don’t contain butter or oil.

They are so fluffy that you absolutely have to bake them!!

INGREDIENTS:

  • 160g of coconut flour
  • 100g of flour
  • 200g of yogurt
  • 1 egg
  • 150g of sugar
  • 10 mg of baking powder

METHODS:

  1. Preheat the oven to 180C 
  2. Mix the egg, sugar and yogurt
  3. Add the flours and the baking powder and mix until combined
  4. Spoon the mixture into the 9 cake cases and put the tray in the oven at 180C for 25 minutes until set
  5. Once muffins are done leave them to stand for 15 mins then cover with sweet whipped cream
