Unfortunately I have been sick in the last weeks, so that I could not bake any cakes. You have to forgive me 😊
Now I am back with this super Berries Chiffon Cake. It is really good and perfect for Christmas..one more thing: it has no butter or oil because I used the yogurt 😍 What are you waiting for?!
150g of flour
100g of sugar
1 tbsp baking powder
300g of berries
125g of nature yogurt
Preheat the oven to 160°C.
In a bowl, whisk together the flour, the sugar and the baking powder.
Whisk together the berries puree, yogurt and egg yolks until well combined, then pour into the dry ingredients and whisk until just smooth and no streaks of dry ingredients remain.
In another bowl, using an electric mixer, beat the egg whites with a pinch of salt.
Once the egg whites have reached stiff peaks, gently whisk the egg whites into the berries batter to lighten it.
Pour into the 18cm baking tin and bake for 40 minutes, until the top of the cake springs back when gently touched and a toothpick inserted into the center comes out clean.
Let cool completely and cover with melted white chocolate.
