Amaretti biscuits mini cakes

These mini cakes with amaretti biscuists are just simple and tasty; moreover they bake in under 20 minutes in a standard muffin pan!

RECIPE (Ricetta in italiano sotto)

INGREDIENTS (x9):

  • 125g of Amaretti biscuits
  • 120g of flour
  • 2 eggs
  • 80g of sugar
  • 100g of butter
  • 50ml of milk
  • 1 spoon of baking powder
  • 2 spoons of Amaretto liqueur

PREPARATION:

  1.  Preheat the oven to 180C
  2. Mix the egg,milk and sugar
  3. Add the flour and the crumbled Amaretti biscuits
  4. Melt the butter and pour into the mixture
  5. Finally add the liqueur and the baking powder
  6. Mix until omogeneously combined
  7. Spoon the mixture into 9 cake cases and put the tray in the oven at 180°C for 15 minutes until set
  8. Once muffins are done leave them to stand for 15 mins then cover with sweet whipped cream or icing sugar

RICETTA

INGREDIENTI:

  • 125g di Amaretti
  • 120g di farina
  • 2 uova
  • 80g di zucchero
  • 100g di burro
  • 50ml di latte
  • 1 cucchiaio di lievito
  • 2 cucchiai di liquore all’amaretto

PREPARAZIONE:

  1. Preriscaldare il forno a 180°C
  2. Mescolate le uova, il latte e lo zucchero
  3. Aggiungete la farina e gli amaretti sbriciolati grossolanamente
  4. Fondete il burro e versatelo nell’impasto
  5. Mescolate bene e aggiungete il lievito e il liquore
  6. Amalgamate omogeneamente il composto
  7. Versate il composto negli stampi e cuocete a 180°C per 15 minuti
  8. Lasciateli raffreddare per almeno 15 minuti prima di servirli. Potete decorarli con panna montata o zucchero a velo.
